Resources for Women
Tired of the same old dips or sauces? Or want to know how to “fortify” your pasta or sandwiches with more protein? Consider cashews. They are a good source of copper, Magnesium, Manganese, nutrients often deficient in our typical diets. Ideally, purchase only “raw” cashews (not roasted), for best nutrition and flavor.
For cashew dip; soak 2 c. cashews in 4+ c. water 4-8 hours, drain the soaking water, add 1/2 c. fresh water, 1-2 T olive oil (optional, type your choice, helps texture), puree again and season according to your taste.
Savory dip? Try ½ tsp salt, ½ tsp + lemon juice or apple cider vinegar, chopped chives, garlic, onions, your choice. (No one can guess what’s in your party dip!)
Sweet dip? 4 T. honey, agave, or maple syrup, or cinnamon, to taste.
Sandwich spread? Try mixing it with pesto, lime juice, sun dried tomatoes, chopped artichokes, leafy greens, the possibilities are endless.
Cake frosting? Mix with 1-2 T. lemon juice, 2 T. coconut oil, 1/3 c. maple syrup, to taste of course.
I use pureed cashews as a base for basic white/cream sauces (adds protein and reduces need for flour), e.g. for macaroni/cheese, or cream soups. Or use whole cashews in stir fry dishes, or bake with other grains/nuts for trail mix! Enjoy!
